Labor Day is all about gathering with friends and family, firing up the grill, and celebrating the last long weekend of summer with food that feels both fun and comforting. And no backyard table feels complete without corn — sweet, golden, and in season right now.
This year, we’re taking a classic favorite — Mexican Street Corn (Elote) — and giving it a Labor Day twist: serving it off the cob for easy scooping and enriching it with our signature Broth Masters bone broth butter. The result? Smoky, creamy, tangy, and just the right amount of messy — but in a party-friendly format everyone can enjoy.
Mexican Street Corn (Esquites) with Broth Butter
Ingredients (serves 6):
- 6 ears fresh corn, kernels cut off the cob (about 5–6 cups) you can use frozen corn.
- 2 tbsp butter
- 3 tbsp Broth Masters chicken bone broth
- 2 tbsp mayonnaise
- ½ cup cotija cheese (or feta), crumbled
- 2 tsp smokey paprika
- Juice of 1 lime (plus wedges for serving)
- 2 tbsp fresh cilantro, chopped
- 2 stalks green onions finely chopped
- One small red pepper chopped.
- A handful of chopped parsley
- Salt & pepper to taste
Directions:
- Cut kernels off fresh corn cobs.
- Heat a large skillet (cast iron works best) over medium-high. Add butter and broth cook for about 2-3 minutes until glossy and slightly reduced.
- Add corn in single layer and cook 3-5 minutes, stirring occasionally, until lightly charred in spots. Beware, a few kernels may pop like popcorn.
- When finished roasting the corn, add red pepper to the pan and sauté for 1 min.
- Place corn and red pepper in a bowl add cheese, cilantro, green onions, and parsley, reserve some of the greens and cheese for garnish. Season with salt, pepper, and smoked paprika.
- Top with cheese, cilantro, green onions and an extra sprinkle of smoked paprika .
- Garnish with a little cheese and chopped parsley . Serve with lime wedges.
