Broth Masters Mashed Potatoes with Butter-Garlic Roux, and Gourmet Toppings!

These aren’t your ordinary mashed potatoes —inspired by Julia Childs mash potato recipe, Broth Masters takes it up a notch, making it a nourishing, restaurant-quality dish infused with Broth Masters bone broth, rich in collagen, calcium, and deep umami flavor. The butter–garlic roux replaces the traditional roux with a silkier texture and more nutrients. When serving, add finely chopped chives or create a potato bar with your choice of soy–mirin mushrooms or caramelized onions, and finely chopped chives This dish is pure comfort with a gourmet edge. A great addition to your Thanksgiving feast. 

For the Mashed Potatoes:

Ingredients:

  • 2 1/2 Lbs yukon gold potatoes, peeled and cubed
  • 1 Lb russet potatoes, peeled and cubed
  • Salt to taste

Instructions:

  • Boil potatoes until soften
  • Drain and put through a potato ricer

For the Garlic Butter Roux

Ingredients

  • A stick of unsalted butter
  • 20 garlic cloves
  • 2-3 tbs potato starch
  • 1/2 cup Broth Masters Bone Broth
  • 3/4 cup warm milk or cream (adjust for texture)
  • Salt to taste
OPTIONAL- White pepper or a pinch of nutmeg

Instructions:

Heat  a small pot to medium, and add butter and the 20 garlic cloves, cook on low, so the butter does not brown until soft, 15–20 minutes. Add Broth Master Bone Broth, stir in the potato starch and cook for 2 minutes, then add cream and cook until thick and bubbling, 3–4 minutes more. Using an immersion or regular blender, purée.

For Soy-Mirin Mushroom Topping

Ingredients:

  • 8 oz cremini or shitake mushrooms, slices
  • 1 tsbp olive oil or butter
  • 1 tbsp soy sauce (or tamari for gluten free)
  • 2 tbsp Broth Masters Bone Broth
  • 1 tsp sugar, hoey or maple syrup
  • Pinch of black pepper

Instructions:

  • Heat oil or butter in a skillet over medium heat.
  • Add mushrooms and saute until golden brown (about5-6 minutes).
  • Add soy sauce, mirin, and bone broth. Let simmer until the liquid reduces to a glaze (2–3 minutes). 
  • Taste and adjust with sugar, honey or maple syrup if needed. 
  • Spoon over mashed potatoes just before serving. 

For Caramelized Onions Topping

Ingredients:

  • 2 large yellow onions, thinly slices
  • 1 1/2 tbsp olive oil
  • Salt to taste

Instructions:

  • Heat olive oil in a skillet over medium-low heat.
  • Add onions and a pinch of salt. 
  • Cook slowly on low for 45 minutes, stirring occasionally, until deeply golden and soft.
  • Spoon over mashed potatoes or serve alongside for a sweet-savory contrast
