Crispy Za'atar Chicken and Basmati Rice with Silan Glaze


This One-Pan -High Protein Silan & Za'atar Chicken is the ultimate winter comfort meal, perfect for the 2025 holiday season. As the temperatures drop, this recipe brings a glowing warmth to your table with the golden hues of turmeric and the rich, earthy aroma of za'atar. 

Whether you are hosting a festive gathering or looking for an easy, high-protein weeknight dinner, this dish delivers "holiday-level" flavors with minimal cleanup. The star is the silan (date syrup), which provides a fruity, festive sweetness that caramelizes into a deep mahogany crust, while the bone broth ensures the rice is savory and nutrient-dense. 

One-Pan Winter Holiday Silan & Za'atar Chicken 

Prep time: 15 mins | Cook time: 45–55 mins | Serves: 4 

Ingredients 

Chicken: 4–6 bone-in, skin-on chicken thighs (approx. 2 lbs).

The Rice & Liquid:

-2 cups Basmati Rice, rinsed well.

-3  cups Chicken Bone Broth. 

-2 medium onions thinly  sliced 

The Festive Marinade: 

-3 tbsp Silan (Date Syrup) 

-1/3 cup  Za'atar 

-1 ½ tsp Ground Turmeric (divided: 1 tsp for chicken, ½ tsp for rice). 

-3 tbsp Olive oil. 

-6c cloves Garlic, sliced 

1 tsp Kosher salt and 1 tsp fresh ground black pepper. 

Instructions 

1. Marinate: Whisk silan, za'atar, 1 tsp turmeric, 2 tbsp olive oil, half the garlic, salt, and pepper. Coat the chicken thoroughly. Let it sit for 20 minutes to absorb the winter spices. 

2. Sear: Heat 1 tbsp oil in a large oven-safe skillet over medium-high heat. Sear chicken skin-side down for 10- 12 minutes until crisp and caramelized. Flip for 2 minutes, then set aside on a plate. 

3. Aromatics & Rice: Sauté the onion and remaining garlic in the pan drippings. Stir in the rinsed rice and the remaining ½ tsp turmeric, toasting for 1 minute until the grains are golden. 

4. Deglaze & Assemble: Pour in the bone broth, scraping the bottom of the pan to release the savory bits. Nestle the chicken thighs back into the pan on top of the rice, ensuring the skin stays above the liquid line. 

5. Bake: Cover tightly and bake at 375°F (190°C) for 25–30 minutes. 

6. The Holiday Finish: Remove the lid and bake for 5 more minutes to re-crisp the skin. Let rest for 5 minutes before fluffing the rice. 

Serving Suggestion: For a beautiful holiday presentation, garnish with pomegranate seeds and fresh parsley to add a pop of festive red and green.
